Ingredients:

1 tbsp olive oil

1 onion chopped

2 cloves garlic, minced

2 cups cooked brown rice

3 cups broccoli florets

Sauce

1 cup blanched almonds

1 cup water

¼ cup HCW Nutritional Yeast Flakes

1 tbsp onion, chopped

1 tbsp HCW Tapioca Flour

1 clove garlic, minced

½ tsp sea salt

Method:

  1. Preheat oven to 180°C.
  2. Steam or boil broccoli florets until tender and set aside.
  3. Place almonds and water in a food processor and blend until smooth.
  4. Add the rest of the sauce ingredients and blend together well.
  5. Sauté the onion and garlic until soft.
  6. Stir in the rice, broccoli and sauce and mix together well.
  7. Transfer into a casserole dish and bake for 20 minutes.
