1 tsp olive oil
½ medium onion, thinly sliced
1 small green pepper, thinly sliced
100g HCW Soya Mince, Organic
1 clove garlic, crushed / chopped
3 tsp paprika
1 tin chopped tomatoes
100ml red wine
1 tsp oregano
1 tsp tomato puree
1 tsp sugar
Salt and pepper, to taste
- Sauté the onion in the olive oil for 5 minutes, until tender.
- Mix in the green pepper and soya mince and sauté for 5 minutes or until the pepper is tender. Stir in the garlic and paprika.
- Add the chopped tomatoes. Mix in the wine, oregano and tomato puree. Bring the mixture to a boil. Reduce the heat to low and simmer for 25 minutes, until thickened.
- Just before serving, stir in the sugar and season with salt and pepper. Serve with rice, pasta or potatoes.
